Makes 4 servings @ $.57 per serving.


1 box Jiffy cornbread mix

3-4 hot dogs

1 egg, slightly beaten

2/3 cup milk


Preheat oven to 400 degrees.  Generously spray a mini muffin pan and set aside.

Empty the cornbread mix into a bowl.  Add the beaten egg and milk.  Mix ingredients and then allow to rest for about 5 minutes.  Meanwhile, cut the hot dogs into 1 inch pieces.

Fill about 16 of the muffin cups about halfway with batter (about a tablespoon).  Place a piece of hot dog into each filled cup.

Bake for 10 minutes.  Before serving, run a knife around the edge of each to loosen the corn dogs from the pan.  They should pop right out.
