Easy, Cheap and Delicious Peanut Butter Chocolate Chip Cookies

Makes 24 Cookies @ cost of $0.51 per cookie for the first batch. (Many ingredients can be used again, so the cost goes down on the second batch!)

This is a terrible sweet treat recipe for college students because its simple ingredients and it yields a lot of cookies for little cost.

  • 1 cup – Peanut Butter (any kind you want)
  • ½ cup – Packed Brown Sugar (I use Splenda Brown Sugar for less calories)
  • ½ cup – Baking Truvia (or sugar)
  • 1 tsp. – Baking Soda
  • ½ tbsp. – Pure Vanilla Extract
  • 1 Egg
  • 1 cup – Mini Chocolate Chips (or any add-in you would like)

Preheat oven to 375

Bake Time: 10-11 minutes

Line baking sheets with parchment paper

In a mixing bowl, combine peanut butter, brown sugar, baking truvia, baking soda, and vanilla extract until evenly combined. Fold in chocolate chips and then refrigerate for 30 minutes.

Using a spoon, scoop the dough and roll into 1 inch balls (you will need to squeeze the mixture together to make it stick). Put into the oven and set time for 6 minutes – take out cookies and lightly press them with a spoon in order to make them flat (they won’t be flatten on their own) – put back in the oven for another 5 minutes. Let cookies cook 10 minutes on baking sheet before transferring to cooling rack.
