Easy Chicken Enchiladas

Makes 4 servings @ $3.72/serving. 



1 rotisserie chicken, deboned and shredded

2 cans enchilada sauce

4 oz. cream cheese

8 oz. shredded cheese

12 small flour tortillas

Toppings of your choice:  sour cream, guacamole, salsa



Place the shredded chicken into a bowl.  Add about 1/3 of the enchilada sauce and about half of the shredded cheese.  Mix well.

Pour a little of the enchilada sauce into the bottom of your baking pan to make a thin layer of sauce.

Spread about 1 teaspoon of cream cheese onto a tortilla.  Add the shredded chicken mixture.  Roll and place seam side down in the baking dish.  Repeat until all the chicken is used.

Pour remaining sauce over all of the rolled tortillas.  Sprinkle with the remaining shredded cheese.

Bake for 30-45 minutes at 350 degrees.  Serve with desired toppings.
